The first name that usually comes to mind when most people think of a low carb diet is Atkins.
This is because he was the first person to truly adopt a low carb diet plan as a low fat diet.

Mushrooms filled with bacon and cheese
Mushrooms are a ridiculously good food. Most people I know love them very much
I personally, I love them! I like them fresh and cooked.
This is one of my favorite Christmas party memories. Great!
Although they were filled with a mixture of blue and cheese, this low carb recipe for stuffed mushrooms is still much tastier.
Mushrooms filled with bacon and cheese
- Servings: Mushrooms
- Carbohydrates per serving: about 2 per mushroom
- Preparation time only: 20 minutes
- Effort: Very easy
- 8 oz cream cheese, soft
- 5 or 6 slices of bacon, fried crispy.
- 1 small onion, chopped - or less
- 15-20 large mushrooms
Preheat oven to 350. Remove 4 or 5 of your mushroom stems safely. Thoroughly clean and separate your mushrooms.
Now chop your onion very well, and chop your safe stems well. Bake the bacon until crispy, preserving the fat. Cook your onions and stems until the bacon grease is soft. Now remove the grease and add your soft cream to the onion / stems in the cheese. Crush your bacon well in the cheese mixture and mix. Scoop each mushroom into a cap.
Bake for about 15 to 20 minutes on a baking sheet along the edges, then brown to make the tops brown well. YUMMY! The next day it can be refrigerated in the oven and reheated!
