1 Cup of leftover rice
2 Tbsp of Oil (Vegetable/sunflower Oil)
1 large sized Onion chopped
1 Green Pepper chopped
2-3 Garlic clove minced
1 Tomato finely chopped
1-2 Green Chillies chopped
2 tsp of Chilly Powder
1 tsp of Cumin
Coriander leaves for garinishing
Salt to taste
Heat oil slow heat.
Add cumin,chopped onion and green pepper until onions and green peppers are tender or fry it until it converts into light brown in color.leftover rice recipe
Once done, add garlic and fry it for a minute.
Now add tomato: fry further for a minute add green chillys,red chilli powder and finally add leftover rice and salt. Cook everything together for next few minutes.
Finally Garnish with coriander leaves.
Now it’s ready to serve, Serve Hot with a piece of lemon.
You can add any vegetables instead or with green pepper ,as per your wish like paneer,mushrooms,babycorns...etc

Today we are going to make fried rice with leftover rice.Instead of wasting we can use it for lunch, dinner or side dish.No matter what kind of leftover rice we have, it can be convert into a tasty new meal as my hubby did. Nobody will even say that this rice is leftover unless you tell them.
