Easy pound ground beef recipe for health-image

ingredients:

1 pound ground beef
2-3 Tbs. Olive oil
1 medium sweet vadalia onion, diced
1 stalk celery, chopped
1 medium red pepper, chopped
1 zucchini sliced lenghtwise and chopped
1 tsp fresh chopped garlic
1 14.5 oz can diced Italian tomatoes
1 14 oz can beef broth + 2 Tbs water
1/2 tsp seafood seasoning (Old Bay)
1 tsp dry italian seasoning

1 1/4 cup Orzo (rice shape pasta)
Handful chopped fresh Italian parsley


Cooking Instructions:


1) Brown salt and peppered meat in large pot till brown, remove meat and set aside. Drain fat.

2) Add Olive oil to same pot

3) In olive oil cook onion, celery, pepper and zucchini until tender

4) Add garlic, unstrained tomatoes, beef broth, seasonings and orzo. Salt and pepper to taste.

5) Reduce heat and simmer uncovered stirring occasionally, until orzo is cooked and liquid is absorbed. About 20 min.

6) Stir in fresh chopped parsley. Serve.pound ground beef recipe
