8 Thin Catfish Fillets
1 Teaspoon Dried Thyme
1 Teaspoon Oregano
2 Teaspoons Cayenne Pepper
1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Salt
1 Teaspoon Paprika
1 Teaspoon Dried Parsley
1 Cup Melted Butter

Lemon Juice


Mix all of the dry ingredients in a bowl. Rinse your catfish fillets and pat dry with paper towels. Using a brush,

brush butter on both sides of each fillet then sprinkle your dry mixture evenly on both sides of every fillet.

Heat the rest of your butter in a cast iron skillet until it is very hot,

and fry the fish completely on both sides until done (4 or 5 minutes on each side).

You should have some windows open, because this will get very smoky!

Once done, sprinkle lemon juice over the cooked fillets, serve and enjoy!
