  • Ingredients
     

  •     1 tablespoon olive oil

  •     1 medium onion, chopped

  •     2 celery stalks, chopped

  •     2 medium carrots, chopped

  •     1 tablespoon minced garlic

  •     2 cups cubed cooked chicken (skinless)

  •     2 cups (4 oz) uncooked egg noodles

  •     ¼ teaspoon black pepper

  •     1 dried bay leaf

  •     2 (32 oz) containers chicken broth (organic if possible)

  •     1 tablespoon chopped parsley

  • Instructions

  •  In a huge stockpot, heat the olive oil over medium heat.

  • prepend the onion, celery and carrots. Cook, stirring often, 5 minutes. prepend the garlic and cook, stirring, 1 more minute.

  • prepend the chicken, noodles, black pepper, bay leaf and broth

  • . bring to a boil over high heat, then reduce heat to medium-low. Simmer, uncovered, about 10 minutes, stirring occasionally, until vegetables and noodles are caring.

  • take off bay leaf and serve, garnished with parsley.

Notes:


To reduce the sodium content, use reduced-sodium broth.
