1 Chicken That Weighs Approximately 4 Pounds
2 Tablespoons Lemon Juice
1/2 Teaspoon Lemon Zest
1 Teaspoon Crushed Garlic
1/4 Cup White Wine
1 Teaspoon Oregano
1/4 Teaspoon Salt
1/4 Teaspoon Fresh Ground Black Pepper
3 Tablespoons Extra Virgin Olive Oil
Place the chicken on your cutting board with the breasts facing down.
Using a sharp knife, cut down the chicken on each side of the backbone. Toss the backbone or boil it for stock.
Turn the chicken over and pull the sides out,
press down on the breastbone with the palm of your hand to snap the breast bone so that it lies flat.
Mix all of the other ingredients together and rub it onto the chicken well. Bake at 350 degrees for an hour and 15 minutes or until done.
